Her Hextech Ultimatum isn't "better" than Jarvan's ult, it's different than his and provides different benefits.

Jarvan's does:
-AoE Damage to everyone caught inside
-Creates a circular wall that traps everyone inside but can be jumped through.
-Smaller area of effect

Camille's does:
-No damage on impact, but provides %current HP on-hit magic damage
-Initially knocks everyone out except the target who can't leave by any means
-Allies and enemies can re-enter the arena after the initial cast.

They're very different abilities with different applications. Jarvan's is better for teamfighting because of it's AoE damage and creating terrain that requires a gapcloser/dash to get through (ie it affects everyone on the map)

Camille's just gives her a little extra dueling power and traps an enemy, but enemies can re-enter it so using it to engage without proper follow-up from your team will lead to you getting gang raped in seconds by the enemy team.

I'm building Hydra into cleaver, if the enemy is mostly squishy I'm skipping cleaver for Maw against AP, immediately going BT against AD or low AP/hybrid champs, I've been taking swifties and lucidity boots often over Merc treads unless the enemy is heavy AP. I've experimented with Sheen because some guys said it was good since Q procced it but it's such a weak power spike IMO probably won't build it again. Debated building DD but since the vitals passive doesn't proc it don't really care for it.

I'm trying to get the hang of trading with her, but her inconsistent feeling damage has me eating disadvantageous trades even when I proc passive with Q and land both halves of E.

I was building Cleaver because a huge portion of her damage is still physical and she builds the stacks up really quickly, plus the superior of the two phage passives and 20% CDR as well as more raw AD than Triforce.
