You and a fleet of a handful of others fly around mostly in battleships to fuck up NPCs that randomly pop up in certain areas, you follow your flight commander's instructions and generally you have to use specific weapon types as well as specific defense types. Missions tend to pay several hundred thousand ISK, they're somewhat long and tedious and lowsec also runs the risk of getting jumped by lowsec gangs with the potential to earn a bit more valuable drops. Drops are usually crap, and if you did well you get future invites.

Things to note, you need to decide on if you prefer shield tanking or armor tanking. The former is mostly caldari and minmatar ships, the latter is mostly amarr and gallente ships, there's also sometimes T3 cruisers providing logistics.
Dunno if things changed but last I played, Shield fleets tend to be more sloppily organized and big issue is capacity management, armor fleets tend to be more tightly knit and sometimes elitist and big issue is ammo management as you'll want to bring more than one kind of ammo and be quick on the draw to reload a different ammo type.

Doing them for about 6-8 hours will easily net you around 1bil or more ISK as they take a while to do, minimum 20 minutes if everyone's on point. Investment is quite a bit.

Is it realistically possible to be proficient at everything, or will you generally need to settle for 1 or 2 things?

Incursion tab tells you where the incursions are, you can go to those systems and try to pug it up when there's a bunch of folks in local, I believe there's a few major groups depending on if you're looking to do armor or shields. So, used to be that signing up with a referral would give you a 21 day trial instead of a 14 day trial.
And even you ever bought a PLEX, the person who referred you would get a free PLEX.
The second part still happens, but the first part works a bit differently.

Alphas who sign up with a referral get 250,000 extra skill points at the start of the game.
The exact time to skill point ratios are based on your attributes, but that's around 6 days worth of exp
More importantly, Alphas gain exp at half the normal rate. So it's really more like 12 days of training.

What I'm getting at here is, go make a new account.

Is it just me or is trying to make isk through wormhole diving really hit-or-miss? I spent the last 4 hours scanning down wormholes and the sites in them and all I got was 6m from the single unguarded gas site I found. Every other gas site was either an Ordinary Perimeter Reservoir or already had its timer rats spawned, which I couldn't clear in my Venture. Frustrated at that I swapped to my Heron and tried to find some data/relic sites, but every one I scanned down was a guarded one. Not a single pirate site at all. This is in stark contrast to my first trip doing relic/data WH sites where I made 100m in just two sites. Is this duality common or was I just really unlucky today?

Hauling is pretty pointless in T1 industrials because of the gankers.

T2 haulers is more viable due to the bonus to resists and better fitting stats. Freighters are the best for obvious reasons. Station jewing is easy if you have the capital to start. You basically need to look at popular items and set buy orders and sell orders accordingly. Its market PVP, you're constantly watching and changing your buy and sell orders to maximize isk/hour

Gallente has the most ships focused on drones but they also have ships that favor turrets. No matter what race you pick you'll be expect to use drones as, even when using ships not focused on them, you'll have enough bandwidth to field at least 1 or 2, and forgoing their use will just hurt your dps. If you want to stick with Gallente but use ships not focused on drones I'd suggest the Atron frigate, the Catalyst destroyer, and the Thorax cruiser. They're more focused on turrets than drones.
