I'd rather a brand new race, far more customization for current races meaning no locked facial feature to face types and even add more beards/body hair for guys, or just give us nothing.

1) The #1 source of income for this game is the MogStation
2) The #1 source of income for the MogStation is Fantas
3) There is no reason not to add a new race

BLM has ridiculous single target DPS but SMN has stronger AoE damage. BLM is said to have a high skill ceiling because in the endgame you have to find the right spots in fights to stand in and deliver as much Fire IV as possible.
SMN on the other hand is more mobile, too. Its main source of damage is your three DoTs as well as a bunch of instants that rely on Aetherflow stacks.

Is there any way to craft an HQ level 52 recipe as GSM with mediocre gear, or is it expected that you'll only craft HQ with specialized gear and / or once you've out-levelled the item you're crafting?

I was looking to hand in Mythrite Needles for leves, obviously preferring HQ, but I can't get the quality anywhere near reasonable. Do I just spam normal quality leves for now, and gear up at 60?

PLD is objectively better for fights with high amounts of physical damage, especially if there's physical tankbusters involved. PLD is amazing for A9S due to being able to have a Sheltron up for all of the tankbusters, and it's fantastic for A10S because all of the incoming tank damage is physical too. There's magic-based AoEs but those hit the entire group.
That's not to say that DRK's no good at those fights because DRK still has access to Reprisal, but of course if you're raiding as one you might as well have the other geared and ready to go too.
Contrary to what some people will tell you, PLD is actually fun at 60. You won't see huge spikey numbers like WAR, but your DPS is consistent and your physical mitigation is incredibly solid.

Used to main a NiN,
would come back to play perhaps a SCH (love pixies man) or go some sort of tank.

New Savage raid is out and is the most accessible one to date apparently. Palace of the dead is a thing to help you grind. Level fishing and cul for the true end game

DRKs are great at dungeons due to their synergy of Blood Price/Weapon + aoe damage.

Extremes/raids are also very good since Reprisal is a wonderful cooldown-esque ability. The only one in recent memory that PLD actually outshines DRK on is Thordan EX(irrelevant now however) and A9S due to all the physical damage.

DRK is just more rewarding overall if played well.
