2.0 was kind of neat because it was a completely new experience, they added more stuff as time went on, the future was to be determined. We got coil raid, primals, crystal tower was introduced, it was nice.

They can be interrupted still, it's just a certain threshold (somewhere between 10 - 15% of their max HP) that you have to deal during their cast. And you also have to deal with the game's awkward casting system where a cast is basically already complete about 3/4ths of the way through.
Basically, it's tough, but you can do it with a solid crit on a big hit.

As a DoM main, the previous alternative we had before was that ANY action interrupted a cast. The smallest auto attack was enough to interrupt a caster, which made it very hard to cast much of anything without Surecast/Swiftcast/Equanimity. With BRD and MCH being effectively casters, going back to that old system would make it far too easy to shut down nearly half of all jobs.

I do think the current system is somewhat too forgiving, however. My idea before was to give "Surecast" like traits to certain actions while in pvp. Like if a WHM has Divine Seal up or a BLM puts down Ley Lines, then they wouldn't be interrupted for the duration. And all of this besides, DoW have plenty of tools (stuns, silences, knockbacks, binds) to mess with casters already.

I will admit that there was a certain element of skill required to weave in casts while having multiple melee ganging up on you while also trying to stun/bind them yourself. That was fun, and I do miss the thrill of Sure/Swiftcast coming up and getting a clutch heal off.
I still believe a happy medium would be to give certain abilities a Surecast effect, while still being able to be interrupted from most attacks. Don't want to list them all, but examples of things that'd give you surecast would be Dreadwyrm Trance, Dissipation, Synastry, Hawk Eye, Presence of Mind, and other short buffs like those. Persistent stances like Minuet and Diurnal/Nocturnal Sect, or buffs with nearly 100% up time like Enochian wouldn't get it.

I'm not as familiar with the WAR pvp toolkit, but I think disabling the ability to switch between Defiance and Deliverance should be disabled during battle, while in pvp areas. Being able to swap into Defiance and pop Equilibrium + Thrill + Second Wind and run away is ridiculous, I will agree.
