Because it takes time and money to make characters react believably to characters of a different sex.

If the sex of the protagonist isn't set from the start of game creation, you either have to put in two completely different conversations at multiple points in the game (a lot of multiple points) or fit some beige, boring unisex text in there that's dull as fuck.

Most of the actual well-written games eitehr have shitloads of money to throw at the former option, or have a protag with a set gender. Arguably the best written game of all time, Planescape: Torment, had a male protag, for example.

So what is the main limiting factor for keeping you from beating a dungeon in one go in P5? In P3 SP was easy to refill but there was the "fatigue" system and party members would ditch you and of course in p4 once you ran out of SP you had limited options to refill it (particularly early game). So what does P5 do?

Persona 3 Portable could get away with it because it wasn't using anime FMV's and cutscenes so they had the liberty of making a FeMC or even a fucking DogMC if they really wanted to, the effort was just in
-Making a new model
-Voicing a couple more grunts

The third one wasn't even particularly necessary, they could've given us the exact same SL's as the MC for the most part; that was just a curtsy on Atlus' part.

P5 has a bunch of FMV's and cutscenes all based around Potter so it would be a lot more time and money consuming to make two different scenarios.

However I definitely would not mind sacrificing all the pretty cutscenes and bombastic voice acting for more game content but

Y'know I didn't give a single fuck about Goro back when I thought he was a pretty face with an entirely predictable storyline, and then I just felt disappointed when I thought Goro's betrayal would come completely out of nowhere. But the actual truth of the matter is so trollish it's great, and so is seeing all the asspain coming from people who got incredibly invested in a character they didn't know but wanted him to be boring garbage so hard they now feel betrayed. Thinking about your response, I think what makes it much better this way for me is that the presumed trajectory for his character went off the rails so fast. What we assumed before is that he'd be the loveable detective, right? And some people believed he'd betray the party, but others dismissed the thought because it would be too obvious. But what actually happened is that the seed of doubt was planted early on, the detective prince thing turned out to be a ruse and we learned he was just plain villainous. Thinking it's too soon for another serial killer or being disappointed with his backstory is fair, but I like that he's STILL a foil to the protagonist, and though he's a victim he's still scum who represents the wrong path to take.
