Not him but because SL120 is a shit soul level where quality has a comfy amount of points, but every other build has not enough points.

Either SL75 or SL145. Both of those have variety and single scaler builds. 120 is only 40/40 quality and that's it.

145 it becomes more doable to have 66 STR and like 2000HP instead of 40/40 and shit like that.

Alright so my hornet ring has disappeared
I'm just clearing up some of the last areas of PvE and finished Champion Gundyr earlier today. I got the ring and equipped it then went to the consumed king's garden and swapped to a poison ring to go through the swamp area (didn't realise it was toxic oops). Now my ring is gone from my inventory. I can't see it anywhere and I've tried dying, restarting the game etc. I'm 99% sure I didn't drop or discard it but in the event that I did is there a backup chest or something somewhere?

Mainly because those shrine maidens start shooting their Homing Soul Arrows at you from a really long distance away, forcing you to either engage them with ranged attacks or run a gauntlet of lizardmen and other shit just to get close enough to attack them. Ranged options are limited to arrows (which eat away at your SM) or sorceries (which require you to skill a certain way).

I really love the area since it's so beautiful, but those damned casters come really close to ruining the whole level for me.

The Herald is the Dex/fth starter class, it's just horribly inefficient.
The problem with dex+casting stat is that it essentially translates to "dex weapon + buff" and that plays identically whether it's an int buff or a fth buff. It's redundant having two efficient starter classes for buff builds.

Telling someone "never get hit by a curved sword R1 or you'll take 1k damage" is kinda silly. Any fight is easy to win if your opponent literally cannot ever land an R1 on you. The washing pole is about the only weapon in the game that fights entirely without the use of its standing R1, and that's only because the single most overpowered attack in the game is in its moveset.

The sellsword are countered by a ton of stuff though, the spin combo only works if they hit the standing R1 + spin on you without trading or without hitting your HA. This means that you can outrange them with spears, halberds and similar, or just force them to trade with carthus and lose.

Mercenary is the primarily dex class
Assassin is technically the dex/int class but it's about as efficient as the Herald. The only benefit to it is that it starts with spook and an estoc, both of which take a while to get otherwise. It was probably intended as the speedrunning class since spook is quite blatantly a only useful that early in the game for speedrunning.
Thief's stats are all over the place. It's one of the least efficient classes in the game because the point behind it is starting with shit gear but high luck and basing your build around the drops you get. That's also why it awkwardly has 11 attunement. There's also a luck-based staff so clearly luck/int was an intended build path they wanted the thief to be able to take.

It's usually the shitters who fall first into Eceleb recommended equipment and think that they compensate for poor play or they just think they're hot shit.

Overall I'd say that trying out what you're comfortable with is better than trying what a million other people are doing because even if it turns out to be good, you'll also be invading a lot more people who can counter it due to being familiar with it.

Not perfectly balanced, but fun as hell.
Enjoy o+u moveset, hate bleed builds. Enjoy faith weapon buffs (good variety), hate the sellsword build floating around.

Stealth invasion, swap in a staff to cast spook until nearby. Jump in, burst and hit with a charm.

This example is 120, but the stats that I absolutely had to have are listed above. the 60th for dmb or other buffs, 13/40 for sharp o+u for buffing, 30 endurance to stay on top of them after the initial burst. The vit+havel's allows for sub-30% with decent fashion.

Only other idea I had was to do a non-dex maxed build, and have sorc as a burst. eg:
