The level cap for classes in the trial is 20 iirc.
So you won't be getting to use all the interesting things like stances or stacking buffs.

I can't really tell you anything about crafting in depth myself, however I do know that they're pretty interwoven with how many cross classed abilities you'd want from across the different DoHs.

Yes and no. There's definitely a market for paid ERP but the prices can start low and you won't get very high if you're not good quality.
There used to be a Free Company that was prominent but shit hit the fan when people started joining and textfucking each other for free. They've since splintered into two or three other Companies and aren't so prominent anymore, but I imagine if a good mama-san started her own Free Company and kept shit like that in check, they could make a killing with the new apartments coming.

I've been on Balmung since I've started playing the game and I haven't as much as even flirted ingame with anybody, I'm as far away from the REAL B A L M U N G experience as you could get.

A lot of the fun would have to depend on if you can find something to do to keep yourself busy when you hit endgame. I'm at a point where I'm bored for the rest of the week when raids are done, although I've picked gathering back up so that I'm not freeloading too much off of my friend's generosity when it comes to pampering me with relatively expensive raid food/potions.

It is a treadmill though, you'll eventually get to a point where it'd feel like you're doing the same thing every day until you hit your weekly tomestone cap or finish your dailies or whatever. Friends will help alleviate some of that grindy feeling but you'd still be running much of the same old content.
