I don't think the sans fight is actually hard per se, It's more like a memory game than anything else.

You can struggle with geno undyne even after you beat her because it's more of a test of reflexes, but sans mostly boils down to knowing what he's about to do and since he only has a single pattern it's very easy to not get hit at all once you know what it is.
