The quest "Justice Rains From Above" in Highmountain seems like a pretty easy quest to grind since the mobs all give full xp and you fly around one shotting them

Just have to abandon the quest before you get to 100%

Yeah I've really been enjoying actually reading the quests while questing too. I like the quest in Azsuna where the nelf brother and sister are looking for their parents among those ghosts and you tell the sister what happened to the city and she gets excited and starts bullying her brother with fireballs.

So far I've tried mage, hunter, paladin and monk and none of them feel particularly fun.

Firelands gives like 3 titles and every boss has a mount, iirc. Plus it's one of the best time/money ratio. Mounts are all super rare anyway, so don't expect to walk out of any old raid with one on your first try

They're fine. Decent DPS, crazy survivability.
Good melee DPS for someone that is bad at mechanics, because they have strong shields and can cancel most debuffs, allowing them to ignore a handful of fuck ups.

Previous talent trees gave you a sense of progression.
Even if you just put points into 1% rend damage increase, you knew that in a few levels you'll put a point into something game changing for you. While you levelled, you felt like you're building towards something.
Of course raiding talent builds, pvp talent builds ended up "cookie cutter", as in most effective talent combinations were picked.
But it's the same now, isn't it.
Old talent trees also gave the opportunity to keep two specs in one tree, to cross-spec creating things like the frostfire bolt mage, revenge spam arms/prot hybrid.
They also created abominations, like the SL/SL warlock, the restokin, the DS Destro Warlock.
