In a typical fantasy setting it's high elves who are masters of magic, dwarves who make greater fighters etc.
In WoW it makes sense to see a lot of Orc warriors, or lots of Gnome mages.

I have a question about warlocks. I've been avoiding playing a lock because I dont like really like the way pets work in this game, but I do really like using a shit ton of DoTs in games. So somebody in game told me that at high levels warlocks usually don't even use their pets. Is this true? If I roll a lock can I ditch my demon eventually and just DoT stack?

You'll have an imp out in dungeons and a felhunter or succ for pvp.
In dungeons the imp is just a passive thing honestly. You only need to pay attention to its position and make sure it doesn't pull shit.

In pvp you will make use of your pets a lot more for their powerful utility abilities.
