Im leaning toward either Mining(then Engi)*/JC or Leatherworking/Skinning(Then Enchant)*.

Yep, do stage 1 and 2 and then logout to reset. Usually can get into a 5 man tag group to make tagging easier if you're a melee (just be sure to ditch the party to when you log out it properly resets)
