In Dickplomacy? Just don't hit them too hard when they're on low health. Hopefully you can get a good feel for when that is and don't have to hold back before so, but the safest way would be just lots and lots of small hits with a blunt weapon. They only die if you do a lot more damage than the health they have left.

Yes, if you're the one that conquers it you get increased chance of getting it as a fief.

But you should try to do what >>152469609 said. Cities generate more income.

And ass-kissing can get you pretty far when it comes to getting fiefs (do quests, help other lords in battle and in tournaments). My character currently has more cities than anybody (4) else and she's a vassal (also have 2 castles and a village). I make more money than my king and have a larger total number of troops and a lot of them are max level. After I marry an honorable lord I think I'll renounce my king and start my own kingdom.

buy 30 cattle and a full inventory of food
have the cattle sit right next to you. every time you run out of food, break the siege and kill a cow. the defender's food supply won't replenish if you only break off the siege for 1 or 2 game hours. eventually when the enemy garrison runs out of food there is a 10% chance each day that the garrison will succumb to weakness

I've now taken over every single castle, fief and city belonging to the Sarranids. Why haven't they been wiped out yet? Are those fuckers still running around on the map?

Huscarls, they are very tanky and their shields can help them withstand the crossbow assault. Shat all over the swadians even with their cavalry in open field battles just by ordering my troops to stand close together and let their cavalry charge into my lines, once the initial charge was over all their cavalry would die (the ones that didn't die already to thrown weapons). And they're very good in clusterfuck sieges. Swadian Knights are alright in sieges but huscarls are way better.

Also having your own ranged solution as a backup to the huscards is necessary to avoid heavy casualties because they'll mostly be fighting the enemy in melee (where they excel) while they get shot by ranged units. Something to pick off those range units helps out immensely.

How to defeat Rhodoks and take their castles:
1. Bring an entire army of top tier archers
2. Accept that losses are inevitable
3. Wait until your archers headshot all the crossbowmen
4. Retreat and repeat until they're all dead

Your archers will eventually break through the enemy's shields at the top of the ladders and win anway

The options for vassalhood are different for AI lords. If you talk to your liege and tell him you're done, that's just leaving the faction. If you rebel when wronged over a fief you captured, you keep all garrisoned fiefs and their attached villages, and are presented with a few options for what to do. One of those options is to swear fealty to another monarch, which is basically what the AI lords you're talking about are doing.

it currently has a garrison of 600-ish units including a load of huscarls and rhodok sharpshooters (and ~200 swadian and dark knights) and the 2 castles to the north and south are also filled with around 300 troops each. Nobody has had the balls to come and contest it. I keep their wives and daughters working as whores in the brothel but they're still just a bunch of cucks who wont fight me in Dhirim.

you'll have to be more specific, the "medieval period" spans a great deal of time
really there's only 4 i can think of that are any good:
brytenwalda - 7th century britain only but reflects the pre viking invasion very well, loads of new mechanics, sort of outdated now
viking conquest - 9th century britain and bits of norway, denmark, and frisia; it represents the viking invasion very well and has a whole host of new mechanics on top of brytenwalda, but it is paid
1257 - 13th century europe, massive scope but the overworld is laggy and there are bugs, but it does have the best battle AI in mods and a lot of new mechanics
1429 - 15th century mod set in france before the turn of the tide where france took back the country from england and burgundy, a very underrepresented period in warband mods with mercenary companies and more interactions, but it isn't completely translated from french yet
