Every mon you have in a gym counts when you click on the shield icon in the shop window.

The 21 hour cooldown starts the moment you click and doesn't care if you lose all the gyms 10 seconds later. You can just retake the gyms and collect it again 21 hours later.

You can get to lv 20 easily just by spinning stops and catching as many pokemon as you can.

The only terrain that seems to affect spawns is water.

Water Pokemon near blue patches on the map where water theoretically is in real-life. Also includes Dratinis supposedly. Makes sense given shit like Dratini Lake being a thing.

The dark green patches are supposed to be parks but nobody's found any difference between park terrain and normal grass terrain so everything else other than water, who the fuck knows.
