Oh I think the latest updates of this mods include the EU versions as well.

I personally don't find it too troubling since I do have a save editor to access these Friendship Seal classes. And I usually don't do a whole lot of side-reclassing anyways. If you're playing anything with the JP base game, there's a mod that lets every character access all the classes in the game via Heart Seals, which is just a more convenient version of using a save editor.

As soon as the character is recruited all their levels until they class change are fixed no matter how many times you RNG abuse or reset.
Ways to re-roll growths are to class change, reset when recruiting (Note this will not count for characters who join the chapter already as allies like La'Slow and Peri you will have to exit the map entirely to change their growths) and promoting.

If you level skill, resistance and HP then die and reset you will level skill, resistance and HP again when you level up.
