I found charge moves important on defense cause the AI will always use em.

Going past the fact the attacker will win anyway most of the time, when defending a good charge move can win the battle for the AI.

Ive had an easy time agaisnt a vaporeon because its defending charge move was bubble or something. Multiple slow attacks that did shit damage allowing me to dps it down easy.

Never evolve or power up anything.
Sit on lures as often as possible, hitting them every 5 minutes
Throw away every potion, revive and razz berry for more pokeball space
Never touch gyms
Grind candy every night before bed

Wait until you get your first Lucky Egg and then do 50-60 evolves of pidgy, weedle, rattata and caterpie.

Do NOT evolve anything else, save candy from everything except the easy XP evolves

Bite the bullet and drop five bucks on lucky eggs and use them every time you build up another 50-60 cheap evolutions

Repeat this until level 20.
You can now start catching things worth evolving and powering up

Best way to grind is catch a lot of Pidgey, Caterpie, and Weedle, have like 60 of those 3 ready to evolve, use the Lucky Egg item, evolve them all, repeat.

Don't discount Pokestops either. My little rinky dink town has like 20 of them I can hit in a 10 minute walk (most are war memorial plaques). That's 500xp every 10 minutes.

Also you don't need to be near a big source of water for water pokemon. I get most of mine from a creek I can walk across without getting my socks wet.

Noob here, how do gyms work exactly? Do you take on the guy at the top immediately? Does the person have to be present near the gym to take one on or does a bot take over when you put a mon up there? why are there only two moves and whats with the bar on the second move, is that how many times it can be used? how does battling even work, can you actually select the moves or what?

It's working as it should. It's based on landmarks and high cellular communication levels.
And those are getting Pokemon, gyms and stops just as they should.
