Gibraltar and Dorado are perfect. Volskaya can be a bit of a problem because they can easily get a Tracer out to contest. Temple of Anubis however is has lots of corners to hide turrets etc so not only can they contest, they can quickly reinforce as well.

Hanzo destroys anyone who tries to get into an enclosed space
Symmetra's teleporter is as valuable as Mercy's rez if placed correctly even on attack, where she can set up traps for flankers.
Zenyatta is not as strong as Lucio or Mercy when it comes to healing but he still heals. If you're building an excessively offensive team, Zenyatta is a solid choice.
You will probably lose if you're leaving your team to go 4v6 if your tank and healer are sitting on the payload. The offense should rotate, or you should all be with the payload. It's better to clear a path ahead rather than sitting on the payload.

She is ameizing at contesting points. I can hold points endlessly. Plus, she is a hard counter to lucio, where his survivability is linked to his ability to move fast. He is also really good at contesting and holding points, so shitting him down quickly will help collapse their team. Her walls are great at keeping people off the point, among other things. They last 4.5 seconds. On Koth, that is 4.5% *for free*, every time you block their push.
