Nah, winston(s) should get in, fuck up a squishy and get out before you can kill them. Maybe working as a team you'll kill him first, but that's more 2 > 1 than a counter. You can do pretty much nothing if they go after a target not right next to you as well.

Play him on Attack, he doesn't do at all as good on defense.
The number in the center of your screen is the amount of teammates your music reaches if your team is too spread out to keep that above like, 2, you wont heal much.
Amp It Up is vital, you want to use it to top teammates up after a fight, as well as keep them alive during the fight. Its got a pretty hefty cooldown but I'm always pretty liberal with how I use it. When you die, see if anyone else is about to respawn before running out there yourself. Wait for them and speed boost both of you to the front line. That way you have someone to help you right when you reach the fight
Sound Barrier will seem like it has a millisecond decay at first and can be the most frustrating thing in the world at times if everyone leaves your range/goes around a corner just as you cast it, so try to leap onto the fight into your team to cast it. You'll want to still be healing during sound barrier, as its just an extra chunk of health added onto it, and when its gone everyone will be at the same amount of health they started at.
TL:DR Stick around your team, use your E as much as possible, Ult when you have everyone together

Yes, he specializes in area of denial tactics which isn't a unique concept in this game (literally every defense hero does as well). He does aim them into the general direction of the enemy team, and yes they do high damage because they're incredibly easy to avoid because they don't explode on impact, make loud noises when they do explode, glow brightly, and are one of the slowest moving projectiles in this game.

Of course I've been hit by his grenades, but only when I'm 2 feet away from him or not paying attention to what I'm doing. You eventually have to face the fact that he's not a broken character and that you just have to git gud.

If it's your tank just ignore it.
Sitting on healing isn't going to help them much more than their damage blocking abilities already do, just wait for you e to come off cooldown and then swap it real fast.
And if there literally always is someone damaged then someone is doing something wrong and you should just quit and play later.
Your e should be on cooldown 95% of the time, there is almost no reason to have it waiting unless for some reason your entire team is on different parts of the map.
Having speed boost active during the first few seconds of a team fight is extremely helpful, then you swap and hit e to heal up, then make calls from there.
Your positioning as Lucio isn't as punishable as mercy since your 'escape' utility doesn't depend on having a teammate in line of sight, however you should always have at least 2 people in your passive.
And don't just spam your m1 if someone is lurking nearby, your m2 has an exteremly low cd and should be abused as often as possible. While it deals minimal damage it keeps tracers off your nuts.
Another thing I like to do is speed boosting with e to get behind the enemy team then pushing a few guys into my team.
A suddenly displaced reinhardt and mcree are easy picking.

Try to save your ulti to counter enemy ultis. It doesn't last long enough to be useful in a normal skirmish, but its excellent to counter burst damage.

Also, if you are being chased by an enemy around a building, a decent way to juke them is to run around the corner, then speed boost + wallride back towards and over the tops of their heads.

It's even worse for Winston. His tickle cannon does ~60 dps and uses 20 rounds per second so each round is roughly 3 points of damage. Against armor it's 1.5 per round so he is absolute shit against any armored guy and Torb on other team makes it a nightmare for Winston to hunt down squishies.

You're entirely correct. He requires no skill, takes no risks (he can lob grenades from total safety and seems to take almost no damage even if he grenades someone in melee) and his mine also doesn't seem to damage him.

His riptire has too much health and mobility seeing as it's got higher reliable damage than for example Pharah's ult. Sure you can kill it but again, doing so leaves Junkrat totally safe, unlike Pharah.

As a Symmetra main I can tell you this bitch takes no skill whatsoever.

Your teleporter charges so fast it's ridiculous for something that is arguably the most valuable tool on defence. Your turret's survival is really based on luck (i.e. the retardation of the enemy team) more than placement, you could place them in the same spots on the same maps over and over and have varying results on how effective they are.

Your primary gun is auto aim and your alt fire will miss most people unless they're slowly moving behind a Reinhardt or are standing still and somehow don't notice it.
