Multiple reasons

First is the gatling order P->K->S->HS->D

With the default layout you press the button in the following order
2 3 4
1 X 5
It makes a nice arc and is easy to follow with your fingers. If you switch them around you get
1 3 4
2 X 5
You lose the arc and there's no continuity or line between the button presses.

Then keep in mind you often skip P anyway because 2K is your universal low and sometimes 6K is an overhead, so the order goes
1 2 3
X X 4
Again easy to follow, but if you switch P and K
X 2 3
1 X 4
Now that's just fucking weird

K is rarely used alone, whether it's used for apoke, blockstring or combo, it's often chained into something else so it has a good placement to chain with other buttons. Meanwhile P is often mashed by itself so it has a good placement for that too.

Yeah I find it more difficult on the 1P side too, I could do them fine on PC but I am grinding them out on console because of the added delay.
There are many ways to optimize this combo in the corner and they are not hard, they just entail using different buttons, not too much extra stuff. Usually you will use a different combo in the corner depending if you open them up with tk bad moon, 6K, 2K, haircar to optimize your damage. You should also learn the corner pin relaunch when you can, its actually very easy if you already know the BnB IAD combo. One of the things that makes this combo great is that when you end the combo and go for disk oki, the pin will be in range of Millia to pick up when she hits down for 236H. I believe it adds about 25 damage to Sol.

Evo was created because invididual fighting games couldn't survive on their own. As arcades were dying, the scenes had no tournaments to go to. Getting a venue was expensive, but getting many fighting games to participate made it doable. In fact, originally most people were against Evo because players of different games didn't want to be with each other. Still it worked and became what it is today. So even in the off-chance that Evo would become a Smash event, all that would happen is that smaller fighting games would segregate again to survive.
