I literally can't get summoned. I have the sentinels and dorkmoons equipped 95% of the time. Playing on 3rd character right now. Knights had swords because the lance would either break or just get knocked out of their arm, so it would be fine.
The bigger plate armors for sure, even the standard knight set.
Heater shield just in case, and yes you can parry a charge, so watch out.
