No, you can't buy more, but there are more you can find. Without killing any of the firekeepers, you can upgrade estus four times in a playthrough. You're limited to three now unless you kill some NPCs.

You're probably not going to find anyone online in DaS1 all things considered.

The investment and setup required to match the damage output of melee users is insane. And I mean match just the damage output. Not their health or longevity of damage.

Magic doesn't start scaling well until you hit 40 in whatever stat you are using. It continues to scale until 60 which is where it needs to be to match a melee users output. Not by the stat alone mind you but by also wearing the three rings which boost damage of whatever you casting choice is and the fourth slot for the casting speed ring.

Then your Lightning Spears will do a solid 800 damage at the cost of 70 FP and your CSS will do 900 again at a high FP cost. I also hope you are happy giving up healing for ash flasks or you are shit out of luck once you cast a few times.

Melee builds are effective at half the SL of caster builds and just get more effective and tanky as the level up.

I can't find any weapons I like that actually seem to be good.

Holy Lothric Sword would be my weaponfu if its scaling wasn't ass. People said it has hidden Luck scaling but that amounts to fuck all more damage.

PvP feels like Ultra Great or bust, nothing seems to do much damage and you just get hyper armored through all the time.

Someone please recommend me a good weapon. I'm tired of using my fucking Uchi.

As far as enemies go, same thing. Some are easier to just fight melee, others you can safely hit from afar. The only difference is that you don't have 1000 soul arrows to cheese an entire level with.

Miracles are straight trash other than just getting some extra healing. Sorceries are about the same as they've ever been, from what I can tell.

Pyromancy is just good because it fits naturally into a dex build, and because of the way poise works, dex crushes PvP. Hell even PvE other than the occasional ultra fat fuck who has ACTUAL poise.

I struggled a lot with Lothric castle until I respecc'd my shit to have 30vig/30end/30vit and kept weight <25%, and just using a shitty broadsword instead of heavy ass greatsword. Made things a HELL of a lot easier.

That is literally the entire purpose of invading. Invading is a counterbalance to the benefits of turning human in these games.

By giving yourself the ability to summon phantoms who will make the game trivial, you open yourself up to get fucked by invaders who have an overwhelming advantage.

This is especially true now that we've gone back to the DeS system of significantly reducing health after death.

But by giving the advantage back to the host, on top of defaulting to getting invaders ganked, going human is now, at most, a minor inconvenience to deal with. An extra enemy thrown into the crowd for you and your three sunbros to smash up. Or just fucking tree seed.
