The point is you don't know what he is going to do when you first play it and his attack are objectively harder to dodge than other boss fights.

Sans bleeds, moves about/appears to be breathing in battle, his mouth doesn't move when he talks, and he's very stout for someone who is apparently a skeleton. And in the Kickstarter video Sans drinks a milkshake and it spills out of him because he's a skeleton, but in the actual game his ketchup never spills. Papyrus, on the other hand, just turns to dust, doesn't have idle animations, his mouth moves, and you can clearly see his bones.
So, maybe Sans is actually a human in a skull mask. There's obviously problems with the theory like how is his mask capable of winking but not moving its mouth.

I like the idea that Sans is a human in the Underground, which is why he has knowledge of saves, resets and can just sort of teleport around (because if he was a human he'd have a high amount of Determination, and a high amount of Determination gives you meta knowledge). He might have been a research assistant to Gaster (who could have also been a human, seeing as his head is real round compared to Sans and Papyrus' obvious skulls). I imagine he started pretending to be a monster after Asgore declared war on humanity.

Of course that's some really heavy duty fanwank on my behalf and has a whole bunch of holes in it (why doesn't he know what the queen looks like? Why does he have super powers? How does Papyrus fit in?).
