Mario Party, like most board games, works because of the interactions from other people in the room while you're taking your turn. They're surprised at the luck you get, they curse you when you screw them over. If everybody played at the same time it would have a different atmosphere entirely. It would just be four chucklefucks running around and then getting pulled out of their individual games to play a minigame, instead of uniting everybody around a board game and then diving into minigames to spice things up.
