Car racing didn't really die, both sim and arcade. Now 100% arcade racers did die, and when Wipeout was pulled out of mothballs, ported to PS4 and didn't sell, we can see that there's simply not enough demand because new generation doesn't understand putting effort into games.

HD production standards.

Doing an average racing game in HD is more expensive than doing your average other game in HD.
And cheap mario kart indie knockoffs kind of oversaturated the other end of the spectrum already.
