Doom holds up miraculously as a godlike arcade game. It's as mechanically timeless as Space Invaders or Air Hockey. Half-Life 2, which I recently replayed, still has surprisingly heavy and solid gunplay, fantastic environment art, and clever level design that merits its high praise as it's all still there and gleaming.
I agree about FNV though, but normies are sort of meh about it.
