Why are you paying that much on RAM you don't need ricer lights and you don't even need 16GB unless you're going to do editing at a professional level
1060 is no good for 1440p and ASUS has shit coolers

Also it's a really bad time to be buying computer hardware, the manufacturing components shortages and bitcoin mining have buttfucked the prices really bad. RAM and GPUs especially are being hiked up, I could actually sell my 32GB Corsair Vengence RAM sticks and make $100+ profit.I'd recommend you just wait for things to settle down before going ahead with building.

1060 6gb will be fine, but you might not be able to "max out" every game you throw at it and still hit 60fps.

Still, lowering the settings on modern games doesn't affect the visuals as drastically as it used to, so you should be ok.
