Let's assume these thieves know the value of computers. They think the data is possibly worth more than whatever the monitors or so are, so they target them. Now what happens when that data, which is common, tends to be useless? They may get some private credit card info, but their haul becomes a waste after that. That's why most thieves grab everything they can. This was also done in the middle of the night I'm assuming since they had the time and ability to take such obstrusive devices. This also calls into question various other factors.

I took criminal investigation and also have many detective friends. This theft has a very high chance of being orchestrated.

The parts within the towers might fetch a few thousands bucks. Buying/selling second hand parts are still quite common here. Monitors might be tricky to handle as the screen might break while transporting, then it would make the item useless. I work at a studio, and people broke in and stole shit. They stole pcs and tv screens, but left the brand new wacom cintiqs we use for work. They didn't steal them because either they weren't familiar with them and their value, or would be too narrow of a market to resell.
