I unironically love that line and will defend it. Roxas' mind is literally a year old, he can barely grasp concepts like friendship. Eating ice cream is a simple activity that his simple mind can understand. His friend is now disappearing forever and Roxas, having the emotional and mental capabilities of a child, is unable to articulate what it was that they shared. So he grasps for the only thing his one year old mind can understand, the one constant in his friendship with Xion and Axel, something that can serve as a metaphor for their friendship and time together.

Not even trying to argue that KH had a 2deep4u story, as a fan of the series I completely acknowledge most of it is tripe and friendship wanks, but this is one of the few plot elements that I think has a subtle genius behind it.
