Though I can't supply the source, I remember seeing some article about how a lot of gen 1/2 were based on the Gameboy limits with sprites. Once they got to the 3rd gen, they had a lot more freedom in how pokemon looked.

Imagine if Pokemon started with the DS. The pokemon we grew up with would look so much more different I think.

As someone who has been following Pokemon for the 20 years its run, I'm fucking sick of Gen 1 now. It was great back then sure, and Looking back on it and revisiting was always nice, but ever since Gen V's lack of national pokemon, Gamefreak has found some way to obnoxiously shove Gen 1 into every single orfice of every single game, medium, Cartoon, etc. and pushed it so hard that I just don't fucking care anymore.

Pokemon fans are the reason this series will never fucking evolve, and after 2 fucking decades I'm just about fed up and done with it.

Gen V tried to go back the right way by re-introducing a dex and world that paralelled gen 1, but wasn't. It gave you the chance to go and explore an unfamilliar world with unfamilliar pokemon that you could put a team together and explore with. It gave us a reason to break out of our comofrt zone again instead of relying on pokemon we already know and like. The problem with Gen V was its pacing was utterly fucked.

The pacing, linearity and the actual quality of the 'mons and world were all issues. Story was awful and shoved in your face way too much for one that bad, too. Most of the new Pokemon just felt like dime store versions of existing ones and the world felt dull and not even slightly memorable. B2/W2 fixed a lot of these issues but we all really need to actually stop buying first releases. Better versions are always on the way.
