Like the other guy said, start with II and go from there, but avoid VI, VII, IX and X.
Unless you hate turn based combat then you might as well avoid the whole series and go right to over the top style over substance combat that XV has. The story isn't really good though and lacking exposition on a lot of characters and it also has multiple DLC episdoes and will get even more in the future + story updates that will probably take anotehr few months or years. So i wouldn't say it's a great start, maybe play it in 2 years when it's done. Aside from the story it doesn't offer too much either, there're a few dungeons but imo only two are good, post game content is basicly just a platforming dungeon, it has no optional summons and there're small issues like only eing able to pick one hunt at a time so you'll always have to run back and forth.
Just buy or emulate some of the old ones and see if you like them. Don't just buy 10 of them right away

Definitive opinion, here. FFXV would be a fantastic Final Fantasy, but for three key flaws.
>Not enough optional content
If the dungeons were unique/interesting, had plots attached to some, or had puzzles to open them, things would have been much more fun for everyone involved. Nothing on the level of the Deep Sea Research Lab (or anything optional in FFVIII, really), or even fun stuff to do like they filled VII/IX with. Just a good-not-great FF-themed open world with a fast travel mechanic. Also flight probably shouldn't have been included for what they were able to accomplish.
>Combat
Where do I begin? No real movesets, just tapping B and hoping Noctis performs the animation you had imagined he'd do in that particular moment. Ascension is a neat way to handle levels but kind of highlights just how shallow the system is. There also is no weight to anything. It all looks cool and flashy, but there's no tension. You just rumble around spamming potions to solve every problem. Old FFs you had to decide when the right time to treat injuries/statuses was. To accommodate the new "zip around doing nothing but everything drops dead" system they basically stripped all but the most vital hallmarks of FF presentation/gameplay (item names, status bars).

Not the guys themselves. I loved the characters even though I didn't really want to. It was just so obvious that you were meant to get Aranea, Cor, and others in your party proper. I don't even care about controlling them, I just want to travel and camp with the gang.

Pound for pound it's a pretty good waste of 80 hours. People who haven't played FF love it. People who have know that it's a shadow of what it could've been.

Optional and postgame content was a huge disappointment.
The only dungeon i liekd was the one with the block pushing, the other ones were just meh and overall there was no reason to do them, there're no optional summons or anything.
