There are a bunch hidden through every act. At least 2 per act. Just look for them and you should find all 7 by the final level.

Sometimes the level will lead you to them, and sometimes you'll have to try jumping into some walls to find the ring.

When you get all seven emeralds, the giant rings give you like 50 rings or something, I'm not sure how many but it's enough to keep super mode going.

The checkpoint special stages appear she. You got a check point with 30+ rings. They reset whenever you hit a new check point, so you can run into the same 2 checkpoints to keep trying the special stages.

The checkpoint stages give you medals which let you unlock a few special settings.
