They're mostly the same game with different theme characters.
Pick any of them, they're basically the same game.
The Untold series attempts to make EO appealing to normalfags by adding a story mode.

Play them in order from EO1 for the true experience, EO4 for ironic weebs and people who just want to get in the wagon fast.

I like everything about the EO games except the tacked on map drawing shit. Everytime I play an EO game I find myself wishing that the map drawing wasn't even a thing. If I wanted to make maps I'd do it on grid paper, and then I would at least have something to show for it.

There's no challenge or fun in drawing walls, and you still have to place all the icons and notes on the map manually. It's the best way to play.

I just started with the 3rd after dropping the 1st one.
I wish the jobs names were a little bit easier to understand (Like healer,cleric,medic,etc instead of a fucking MONK).

I'm still trying to find the best starting party.

Dunno about the DS games, but 3DS ones offer the options to auto-map floors or both floors and walls. And the actually important things like FOE icons etc. you still have to place manually. So I don't think having walls auto-mapped detracts anything from the game.
