San Andreas is the big dog. A lot of other game companies would have cut features like needing to eat or learning different fighting styles or the casino stuff, but SA packs it all in to one giant game and does it well.

Vice City has a lot of style and maybe the worst map, and it isn't that big of an upgrade over GTA3 (just mainly the helicopters), it's still a really solid entry.

GTA3 is simplest of the bunch, and I used to not appreciate it as much - but after playing modern games like the Assy Creeds, GTA5 and Witcher 3, I really appreciated it for the first time since I had played it on my PS2.

GTA5 was clearly inspired by writing in things like Breaking Bad, so if that's more your style, then you might not enjoy the PS2 era games.
