Replaying this after some years on the PC and holy shit i don't remember it being this much of a pain in the ass in the beginning. I remember being able to curbstomp Baal but starting all over again makes me want to break my controller. I just want to get my thief to a ridiculous level so i can steal shit.

D1 is far, far behind even D2 in terms of combat, mechanics and overall QoL.
More people on /v/ who think otherwise should replay D1 and remind themselves how much the later games have progressed compared to the original.

I have never seen anyone say otherwise. The only place where D1 beats the other Disgaea games is in the story, it's gameplay suffers from simply being outdated in comparison to the later entries.
