GPD Win or GPD Pocket? Which one is better for gaming?

Hell I'd take it with a SD 435, my cheap LG phone plays everything I throw at it fine. I just don't want to lug a fucking BT pad around.

GPD Win, if you want to have a separate controller/fightstick. It does cool better when you do not have it plugged into the adapter.

I will advise to stay away from FPS since the layout for WASD is just horrid.

WIN has a gamepad, Pocket doesn't. You don't get a Pocket for gaming, you get it if for whatever reason you need a teeny laptop that runs Windows.
