I know that some of these VAs aren't told what their role actually is, just vague instructions. I imagine its different in Japan. Really I think its just bad voice direction and choices. Like how Effie's VA does fine with other characters, but Effie's voice is bad, partially because they chose the rough tomboy voice instead of a gentle voice like in the original, and also because they chose someone whose rough tomboy voice isn't very good.

It's almost entirely down to not giving the actors appropriate prep material and not directing them properly. You can get similarly bad results in Japanese, but there's a little more care taken with getting the actors acquainted with their role. Group recording sessions might help a bit, but simply knowing the proper context of a line also works.
Of course, half the criticism of English acting in places like this is from people who think good acting is where you can really tell that the actor is acting.

Oboro is a great tank, but tends to fall off in lategame, especially when she has to compete with Hinoka. Setsuna also has Takumi as competition, but her speed is notably higher than his.

Also, while it shouldn't matter too much with how late you get them, the S-rank bow is miles better than the S-rank naginata.

I think having more supports to pick and choose from is fine, honestly. I'd rather see several average supports, maybe a couple of shitty ones, and the occasional good one than just read one average/good one.
Compared to the GBA games, where you might get stuck with a terrible support like Hector x Florina, I think the system is fine.

This is true. I think that if you left the Fates characters with only their 6 best supports most of them would look better for it, even if that doesn't actually change much.

But I also think people tend to feel nostalgic towards many of the older characters, particularly those from FE7 since it gets the highest amount.

The older supports have some terrible ones as well. I found most of 9's supports to be bland as well. The problem with having so many is that people cherrypick the worst ones. At the very least you can ignore the bad ones in the 3ds games since you hve no limit. Some of the 3ds supports are really good as well.
