Patapon 1 is good but much more hardcore than Patapon 2. It'll be hard to play Patapon 1 after getting used to all new stuff from Patapon 2.
Patapon 3 is really different from Patapon 1 and 2 - you will either like or dislike it more than first two games. Also, multiplayer part is really hard all by yourself.

just wondering if it's worth the wait since I'm autistic and I actually enjoy the simplicity of just booting up a game on my PS4 rather than whipping out the emulator

Well, Patapon 1 Remaster came out 9 months after announcement, so if you're planning to replay the rest two games on PS4, it might take at least 1.5 years of waiting.
Just play Remaster of first one on PS4 for now, I guess. If you won't get tired of playing Patapon after finishing 1 Remaster, emulate 2 and 3.

Patapon 2 and 3 look great on ppsspp with scaled textures. Haven't tried emulating the first game but I'm sure it's the same
