Why do so few games ever have any focus on experimental/tactical weaponry?
Because that requires effort. It's easier to just take an AKM and attach a bunch of futuristic looking shit to it, because people generally know what they expect from it.

Exactly, it's stuff that's already had the groundwork laid out. To make something new is to have to not only put effort into how it's polished, but how it behaves in the first place.

I assume it jams all common frequencies used by RC drones/toys by just spitting out random noise, the power requirement is probably a secret. Same sort of thing with GPS. Not a new concept outside of the silly gun form factor.
If that's all true, it can be defeated by remaining undetected, having a pre-programmed path for the drone or maintaining stronger signal strength. It's also the case that simple drones without auto-landing features will respond differently, possibly falling out of the sky along with the payload. That could lead to unintentional casualties in urban areas.
