What are the gameplay reasons for Yoshi not being allowed in castles?

In Mario romhacks and Mario Maker, ghost houses really inspired the "LOL, YOU CHOSE THE WRONG DOOR! I TROLL YOU!" gimmick that we all know and loathe.

It wasn't all that bad in Mario World, but people have made it much worse since then.

Game balance. The castles serve as pure platforming challenges meant for Mario only. They limit your skill set to challenge the player in a specific manner as opposed to more free-form challenge elsewhere. It's a fundamentals course.

The Gamecube in general was such a disappointment. Launching with Luigi's Mansion as the Mario game, Donkey Kong went through his dark age, Mario and Zelda both felt unfinished, Doubledash felt so slow.

My only good 1st party memories from GC are Pikmin, Melee, Metroid, and Animal Crossing.

Yoshi, yes. The cape, absolutely not. The castles like many of the levels in SMW start out with a long, flat stretch of ground that allows you to get flying quickly.

The point you're missing is that the cape and Yoshi are broken as fuck, so "limiting" their effectiveness in the remarkably few castles in the game for the sake of "game balance" doesn't fly when they were so poorly-conceived in the first place.

I won't deny there were likely gameplay or thematic reasons for this as well, but I think another part was hardware limitation. I did a lot of romhacking back in the day, and there are a limited number of sprite graphic tile "slots" which can be loaded by the game at any given time, called tilesets. The same slots may be used by different sprites in different tilesets.
A lot of Yoshi's spritesheet is used by other graphics present in the ghost house and castle tilesets. This may be because in order to make room for large, imposing enemies (big boo, those gas bubble things in Valley Ghost House, ball 'n' chain, grinders, and sprites used in boss rooms like Reznor) they needed more room in their sprite tilesets and Yoshi's graphical tiles were used for it. Spawning a Yoshi in those levels and using him shows his head animation occasionally bugs, and his tongue has the wrong tiles.

Shut the fuck up. DD is objectively the fastest game in the franchise, in terms of mechanics. DS has it beat with snaking but everything else in DD is faster; acceleration, time until you can drift again after slowing down (it's instant), hitstun (at an all time low, no bullshit flailing for 5 seconds after slipping on banana peels etc). Even knocking into walls while drifting won't slow you down, you can basically grind on them.
