Pretty easy. NK himself is prone to just walking slowly towards you on the second phase if you go out of his melee range.

Beat him on my third try. Unequip all armor for the second fight, and abuse i-frames for his highly telegraphed attacks, don't get greedy, two-three slashes and then evade, rinse and repeat.

Pontiff is the hardest boss, and only if you're still play Dark Souls when you fight him. The second I stepped foot in Erithyl I got fucking destroyed, but then I stopped playing the game like Dark Souls, and started playing it like Bloodborne, and every boss turned into a joke. The only boss in the game that mashing R1 and using the ridiculously generous dodge roll isn't the most effective way of beating him is the Champ, he's actually easier if you parry him, and isn't as hard to parry as the anime Pope.

DLC never has, and never will be the measure of a game's quality. Demon's and BB are good games consistently throughout. Dark Souls 2 has godly first half and DLC, but the second part is pure shit that makes DaS 3 look good. Similarly, DaS 2 and 3 have good DLC, but that won't make up for the shit that is the base game. DaS 3's problem just seems to be laziness more than anything. They weren't incompetent enough to make the core game mechaics, graphics, and enemy design shit like 2, they actually had a solid foundation. But, the linearity, the lack of any real choice to make, the lack of viable builds, the balance (PvE), all just makes the game unplayable past a single playthrough. The base game was made to be played with a straight sword or quality weapon once, and then just forgotten about.

Also, Gael isn't hard, HP sponge Prince, and Maria 2.0 are harder.

There isn't really much point to getting to 150 though. Well before that you should have already hit the hard cap for STR/DEX/ Stamina/HP even on a quality build.
