HoD was my least favorite GBA era CV game but it's a 7/10 at worst and I can't help but feel like a lot of Netflixfags are shitting on it in particular because they want to fit in.

Not the good ones. The good ones progressively open up useful shortcuts the more abilities you accrue throughout the game to make backtracking more manageable.

I don't think anyone one the Aria of Sorrow team worked on Harmony of Dissonance at least not the level designers.

Just take that "shortcut" in the bone dungeon for example that leads back to the entrance area.
You don't have the charge ability at that pointto break the wall so you have to backtrack the whole fucking dungeon (which is especially horrible due to those shitty bone spiders that always face the same direction and now flinch towards you when hit, making fighting them tedious as hell) and once you DO have it the shortcut becomes more or less pointless since you'll never need to return to that area.
Sure, there's a merchant there in the shortcut but it's not like he's that useful in the game, anyway.

Assuming that "normal guy" mans "normal guy who can shit on Dracula" that's kind of what Shanoa is. She can beat Dracula without using Dominus or the VK which is ostensibly proof that if you're badass enough you can fight Dracula on your own merit.

Shanoa is basically a human equivalent to Soma so she's not a typical example of a human kombatant but no Castlevania character is, even as late as the '90s regular humans were running into Castlevania with modern military hardware and getting corpsed up. However, Jonathan Morris can also defeat Dracula without the help of the VK and his whole thing is physical training.

It's not as bad as people say it is although it's lacking some features because they tried to shove a ton of content into the game and also the graphics were made with complaints about CotM being to dark in mind but HoD came out when backlit screens were becoming a thing so the game looks odd on modern devices unless it's as dark as you can get it.

IIRC Shanoa can beat Dracula without Dominus. Then again every YT video that came up on the front page of Google shows Dominus so either I'm misremembering this or I remember killing him on a ridiculously high level profile where I was capable of doing the requisite damage at the end.

My favourite after Rondo of Blood.

Harmony of Dissonance has the worst progression of the Metroidvanias. Having two castles and having them be a spoiler as it were meant the entire game up until after Death is basically a single path maze. There's basically no warp system until the very end either so if you go the wrong way, you won't know for a long ass time, and have to go all the way back. Its a shame really, it's the only Metroidvania where a Belmont is the lead and the atmosphere and graphics are surreal as hell.
