Immersion is like when to are really into a movie and you are sucked in to it. You don't even remember that you are watching a movie. You've looked past the camera angles and the cuts, or the fact that music doesn't randomly play in real life, and you believe it.

Breaking immersion is when something knocks you out of that zone and reminds you that you are watching a movie. It can be something like a boom mic being visible at the top of the screen, an actor wearing a wristwatch in ancient Rome, a line that is supposed to be serious making you laugh because it is dumb, someone not using a gun properly.

The exact same applies for games. If the story doesn't make sense, it reminds you that you're playing a game. If details don't make sense, same thing. If there is a glitch, if the armor they wear would be impossible on the human form, if something is out of place, etc.

That is mostly because it simply is true for majority of people.
All other things equal, first person perspective will be considerably more immersive than a game that uses any other perspective. That is simply going to work for 90% of people, maybe with the exception of Japanese.

Because you grew up with consoles and you never learned any better. 3rd person actually have THE least immersive game library out there. Even the retarded cinema-emulating shit like Silent Hill uses is better than third person when it comes to establishing a sense of presence. It does have mechanical advantages (well - ONE advantage, increased spatial awareness which generally makes melee combat easier to read).

There is a handful of highly immersive and atmopsheric third person games (Gothic, Witcher, SotC) but those achieve that DESPITE of the massive disadvantage of their view, and through incredible effort put into their world-building and environments.
