I have beaten it without the jump trick, I'm just ranting right now, the fact remains that putting one the biggest bosses in the game in a tiny closed arena while you have half hp (meaning that he'll one shot you) is bad design. A lot of people don't seem to realize you're supposed to do chalice dungeons well after you're already geared out. When it halves your health bar, it's assuming you have enough health that you won't get oneshot.
There's a reason chalice progress is preserved through NG+ and has a static difficulty

Like I said earlier, I already beat it after around 10 tries, what makes it artificial difficulty is that it's the exact same boss than the story one, but in a tiny arena and with half your health while he has inflated damage and hp.

I beat that same story-mode boss on my second try without using a single blood vial, but because of the defiled conditions phase 3 is a nightmare because you can't properly keep your distance, and it's long and tedious fight that will end at the slightest mistake, so most people resort to cheese tactics.
The half-health/one-shot mechanic is doubly stupid when the game was made with rally and aggressive play in mind.

Easy, even with base Skill. Phase 1, dodge forward through his spells and smack him up. When he kneels to power up, backstab him. Then he doesn't get bullet immunity in phase 2, so you just spam gunshots and visceral him to death. The rest of the game is a joke, Chikage is OP in NG.
