Should I play these games in order or can I just jump into whichever one I like? Keep in mind that I don't mind going back to older games with older controls.

AC2's controls fucking suck. The game is good but handling your AC feels like a chore because of how awkward and unintuitive the controls are.

What makes AC2's controls different from AC1/PP/MoA or AC3/SL?

I don't know I haven't played them.
They're just overall awkward, you look around with the left stick and the triggers, but the left stick is also used for movement. The right stick simply has no use. Since you aim with the same stick as you move, when using some weapons which require to be deployed, you can accidentally move forward and un-deploy the weapon.
I don't know what they were thinking honestly.

Only game I've ever bothered to 100% I just wish the narrative were a bit more fleshed out in the English version.
