I've beaten all 3 Dark Souls games multiple times but I can't for the life of me gitgud at Bloodborne. I'm still on Blood-Starved Beast and Vicar Amelia and can't beat either. Do I just need to learn Parry or what?

Yes. Parry is way safer and WAY more important in Bloodborne. Use it frequently. The bloodstarved beast is especially vulnerable

I don't think you can parry Vicar Amelia, iirc, but it's very useful versus BSB.
How many shortcuts have you found in Old Yharnam? It's easy to grind werewolves for a lot of BEs before Blood-starved Beast (there are five in a fairly small area but you can fight them one at a time), and they're great for practicing parry against.
