I remember Disgaea had a variation of this.
The chapter 2 boss is a dragon summoned by Flonne, with enhanced boss-like HP.
Boss tagging didn't exist back then, and this dragon was otherwise just a generic member of the dragon class, so you could capture it if you were determined, and the resulting unit is beyond broken, since base stats play a role in level-up stats, making that unit consistently have HP far and away better than anything you could reasonably get in the game without several dozen reincarnations.

Phantom Brave has Baal as recruitible once you beat him. He has the same stats and growths he does as a boss (albeit at level 1, opposed to the level 4000 you fought him at) making him absolutely shit on what little is left for you to do in the game if you use him. His stats at level one break triple digits, where numbers like 20-30 in a "good" stat, or 40 in a "this unit has only one good stat" are standard.
Most notably, not only is his base HP stat two or three times higher than the next best HP stat, but he has a special multiplier for it, making that stat upwards of ten times better.
In Phantom Brave, there are skills that use HP as your attacking stat.
