At first I was fairly ehh towards them (more of a Pontiff man myself) but their story wormed their way into my heart later.

Because they, like a number of NPCs in the game, and any player who sees how fucked up the world has gotten, have concluded that linking the fire over and over is ruining the world.

Even on my first playthrough, knowing little about their story, I somehow felt bad after killing them. Not the sheer triumph I'd expect from beating a late-game boss, at any rate.
After learning all about the lore and letting the game sink in for a while they're probably my favorite bosses in DaS3. Haven't played any DLC yet, though.

It's certainly up there, but Dark Souls 3 had by far the best boss design in the series and several other contenders- mainly Champ and SoC

Anyone knows of a guide of some sort that explains what I should do to have access to all areas, including DLC, in only one playthrough? I won't bother playing the game more than once but I'd also like to avoid most spoilers/help for bosses.

Easy, you only need to know 3 things.

If you ever desyroy a wooden bridge it will turn into a ladder leading to an optional area.

When you find the "path of the dragon" gesture look for an illusory wall in the same room.

You can use the path of the dragon gesture in a specific spot to reach an optional level.

Keep this three things in mind and you wont miss anything.
