use only basic spells, all the cool looking boss ones suck dick and are worthless. magic in general is pretty worthless but some bosses will be a cakewalk at range. Make a raw weapon and use that until you've got enough int for a crystal weapon.

Elite Knight armour is good.
From where you got the key to enter the lower undead burg (so outside the church), go right across the bridge, find the bonfire, go down, exit past the titanite demon, go through the forest and at the end is a fake wall (with a giant door that can't be opened yet - don't go there for a while it's a high level area).

Go through the fog wall just before the bonfire (do not go right before the bonfire, it has useless items and just has the tree enemies that will always spawn), explore the area (you're gonna die most likely so spend all your souls if you don't wanna lose them) and eventually find the elite knight armour set).

Congrats you have the most powerful midweight set outside of one or two niche uses.

Pyromancy is the most effective:
Look up where to get the following: Cornyx of the Great Swamp, Izalith Pyromancy Tome, Grave Warden Pyromancy Tome, Chaos Bed Vestiges (this isn't a necessity so don't worry) and Great Heavy Soul Arrow (if you really must use magic). Dorhys' Gnawing is wonderful against bosses that can be bled. Also get med heal if possible.

Then spec for 30/30 int/fai, some attunement, say 24. Get a short bow. Get a longsword make it deep or chaos (ideally both).

Congrats, you're now capable of soloing 99% of the game.

Short bow for pulling. Chaos Fire Orb for bosses (or Chaos Bed Vestiges) that aren't immune/resistant to fire, dark orb if they are, Dorhys's Gnawing for bosses than be bleed, Med Heal to replace estus so you can have more ashen flasks and longsword for anything that can be killed faster than using fire orb/dark orb.

Also get the Great Swamp Ring, Witch's ring and Fire Clutch Ring. Sage ring is optional but highly advised. I'd recommend 30/30/30 attunement, int and faith and maybe 15 end, wiht the rest in vitality. One point in dex for the longsword.

You will rape anything in the game.
