I can run this game at over 60fps with upto 300 part ships on a PC from 2012

The controls are fine. You have pitch, yaw, roll, and throttle on one side of the keyboard and the RCS axis controls on the other side. It's got everything you need laid out where it belongs. It's just flying rockets ain't easy. It's literally rocket science. Doubly so now that Kerbin's atmosphere isn't made of soup and is way slippery-er.
