Apocalypse is pretty similar to IV gameplay-wise, although now demons have affinities with different types of skills (for example, Bifrons is good with fire skills, and get bonus damage and less mana cost with those, but is bad with Ice skills), and the numbers have been tuned down somewhat so that there are less bullshit one-shots from either side.
It's better balanced in general. It also adds a few demons.

The story, tone, characters and plot all got heavily persona-ified though, and are often quite jarring with what the setting is supposed to be (apocalyptic tokyo).

However it's pretty fucking stupid that you don't get access to him for a few hours before the alignment lock, and that the final choice is basically plus or minus 10, which means you get fucked if you're really really neutral.

Only real downside is the assist gauge. I only realized after I killed my friends[/spoiler how much of a massive crutch it is to the player and there isn't any way to get rid of it other than doing that route. Aside from giving all the demons affinities (which is an awesome addition to the series), all the demons have unique stat spreads too. This is actually a big problem I have with vanilla IV, demons all far under archetypes for star distribution so they're all actually super samey.

Should I restart? I dabbled in every stat and now I'm getting owned by the Dance of the Dead sidequest. I killed 3 mobs of them but they usually wreck my party with crits and poison. I just beat Minotaur. First battle he wrecked me with crits, 2nd I won easily

it does sound like you're playing wrong you don't need that much stock you need the skills, they are more important. Also as the other guy said you want to focus on a few stats not spread them evenly. It's still early game so you can recover but you haven't given yourself the easiest ride.

Because they are fucking casuals. MAG is a crutch that makes Naraku significantly easier but after that it's totally obliterated by DEX builds in raw power. The boost you get from a single point of DEX is about 1.5x that of a point of STR or MAG. Then you add the fact that MAG can't crit and DEX wins again, because late game bosses won't have easily exploitable weaknesses. Skill slots also aren't as crucial on DEX builds because you only need charge, 1 gun attack, 1 phys, and 1 AoE (for convenience.) It's not too late anon, start dumping 3/1/1 DEX/AGI/LCK and join the world of DEX.

The game is actually easy enough after Naraku that non-perfect stats won't screw you up too bad. But there's always DLC to fix app points being wasted. Also good luck beating Sanat with a MAG build.
