From what I understand, Jack-O Valentine is a slow character. Try playing her defensively and get the pets set up as often as possible to level them up. Also make sure to use the D D HS > x commands. They're pretty useful. Also, remember you can use teh little pet houses as weapons. Good use is to jump then throw one, dash in and attack low. That'll open them up for a combo usually.
At least, that's some of what I've taken away from the gameplay footage I've watched.
Also, her 2H looks like it has some awesome range.

It's pacing. Streetfighter, Injustice, and Tekken are slow by nature for the most part thanks to the neutral game, aka footsies.
BlazBlue is kind of slow thanks to long combos for not much damage and a fast paced evade based neutral game that can sometimes make catching a character tough.
Marvel and Guilty Gear are pretty quick due to high damage and movement options.

I'm not that anon but to shed light on the concept.
The pacing of tekken allows combos and strings to rely on timing, 2d fighters do allow hitstun and timing because of this but your inputs are even more dire and you have to buffer input after input which overall makes the game feel faster.

Tekken is technically slower paced but matches can be over just as fast in tekken as in any other game if the skill difference is that high or if a player is caught wide open at any point and gets heavily punished.

I personally will play just about any fighter, I just can't really get into SF like others do, and I'm not just talking about 5, I hated 4, I thought third strike was pretty good but even then I just can't get into the game.

I like tekkens core, its just that it has an absolute metric fuckton of chararcter specific things to learn, and if you dont know every characters entire range of gimmicks your opponent will meme on you to death.

King and Eddy are extreme examples of this phenomenom where they have either extremely deceptive tools (mids that look low, lows that look mid and highs that look mid) or flat out knowledge barriers (knowing how to break kings many different throws).

These tools may be both extremely damaging on hit and even unpunishable on block, meaning that you have to specifically learn a niche punish for these moves otherwise you get nothing.

Instead of a supplying a proper fighting engine, matches in T7 seem to rely heavily on "who can get their rage move off first". So many elements of the gameplay don't even require any sort of skill. In my book, slow motion over and over again also gets old very quickly. And in the end, it's more of a novelty or gimmick rather than an actual, thought-out fighting game mechanic. But hey, the casual crowd will be pleased!

If you want something a little more "button-masher-friendly," tekken might be your cup of tea.... Key word, might.

Oh I have no problem playing online really. But I vastly prefer playing with friends. I still buy most larger fighting games when they come out though haven't touched Netherrealm games since MK9. PC when possible nowadays.

I even try to keep my skill deliberately low to be less intimidating to play against, but usually it's unsuccessful either way.

How do I bridal express loop off of f.S CH in the Corner? I was practicing for half an hour and tried it on multiple characters bit the furthest I got was f.S > Express > 2P > c.S and then it drop's when I cancel into 5H, every time. I tried it on Faust, Baiken and Milia and saw no difference.
Tried it with different spacing to reduce hits tun decay after Express but no luck.

Have you even played Tekken? One of the foundations of movement requires a degree of execution. There wouldn't be hundreds of tutorials on YouTube for backdash canceling if it was actually easy. In addition to this there are some characters which just frame moves which require an exact input rather than the 3-4 frames you have to link something in street fighter or continue some type of juggle in an anime fighter.
